According to LA Eater, a new Neapolitan-style sourdough pizzeria -- WildCraft Sourdough Pizza -- is coming to the site of the former Le Saint Amour in downtown Culver City. The restaurant is partly owned by Jed Sanford, owner of Abigaile in Hermosa Beach. As this article explains, Neapolitan Pizza is characterized by its leavened dough, the juicy or 'wet' quality of the cheese and sauce, and the extreme heat of the ovens used to cook it.
