The article includes a review and 'tasting notes' of all the restaurant's original cocktails, including the Mezcllin (mezcal, ginger, lemon, pineapple gomme), The Miner Incident (bourbon, apricot, lemon, honey, Thai chili), the Fortune & Glory (gin, orange, cantaloupe, absinthe, orgeat), and the Dutch Prison (arrack, curaçao, lemon cordial, peach, black tea, cinnamon).
Here's what Beau Du Bois says about the drink he calls The Mezcallin: "When coming with the cocktail and doing the play on the Penicillin, thinking about the pineapple and how it emphasizes the roasted agave that you find in a lot of great mezcals. Rather than do something to mask it or use pineapple juice to make it super juicy, I think that the pineapple gomme, while adding texture, the fresh pineapple flavor that you’re getting from that emphasizes that roasted agave and showcases each other.”
