Wildcraft Sourdough Pizza to Open in Late January

In September we reported that a a new Neapolitan-style sourdough pizzeria -- WildCraft Sourdough Pizza -- is coming to the site of the former Le Saint Amour on Culver Boulevard in downtown Culver City. Now, according to LA Eater, we have an opening date: late January. The article continues: "Management is excited about their fancypants pizza oven that was built "brick-by-brick in Naples" by third-generation Neapolitan oven-builder Stefano Ferrara."

The restaurant is partly owned by Jed Sanford, owner of Abigaile in Hermosa Beach. As this article explains, Neapolitan Pizza is characterized by its leavened dough, the juicy or 'wet' quality of the cheese and sauce, and the extreme heat of the ovens used to cook it.
